Outrageous Chocolate Cookies

The name says it all. But wait, is it a mini brownie, or is it a cookie? Doesn't matter. Twenty ounces of chocolate for ~20 cookies? Outrageous.



Outrageous Chocolate Cookies

Makes about 20 cookies

8 ounces semisweet chocolate, chips or chopped
4 tablespoons unsalted butter
2/3 cup all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
2 large eggs
3/4 cup packed brown sugar
1 teaspoon vanilla extract
12 ounces semisweet chocolate chips (or chunks)

- Preheat oven to 350˚F. Slowly melt 8 ounces of chocolate and butter in a microwave safe bowl. Pulse microwave for 20 second intervals, stirring in-between, until the mixture has just melted. Whisk flour, baking powder, and salt in another bowl.

- In a large mixing bowl, combine eggs, sugar, and vanilla and beat until fluffy. Slowly mix in melted chocolate (make sure the chocolate is not hot). Stir in flour mixture until just combined and mix in the 12 ounces of chocolate. Let batter rest for 5-7 minutes to allow it to thicken slightly.

-Drop full tablespoons of dough about 2 inches apart onto baking sheets. Bake until cookies are shiny and cracked, 11-15 minutes, turning halfway through baking. Cool cookies on sheets for 10 minutes, transfer cookies to a rack to cool completely.

  1. I tried a very similar recipe a few weeks ago -- 20 oz.of chocolate with the addition of fleur de sel. SO, SO, SO GOOD. I had to get them out of the house FAST!
